Can I or can't I continue taking Seroquel for my psilocybin therapy? I'm seeing all kinds of conflicting advice online...

The various recommendations you read may have to do with the fact that the combination use of Seroquel (Quetiapine) with psilocybin has not yet been properly investigated in practice. If Quetiapine (Seroquel) is prescribed for the treatment of psychotic disorders such as schizophrenia and bipolar disorder, the use of psilocybin is advised against. If Seroquel However, if prescribed for anxiety or as sleep medication, a psychedelic session with psilocybin might well be possible.

However, it is possible that Seroquel may reduce or influence the effects of psilocybin, but this has not been well studied. This is because Seroquel blocks activity at various dopamine and serotonin receptors, and psilocybin primarily affects serotonin receptors.
